This healthier stir fried rice is gluten-free, grain-free, vegetarian, packed with protein and fiber, and is ready in under 15min! It uses cauliflower instead of rice, which makes it a little lighter but without compromising on taste!

How to make cauliflower rice
I always have frozen steamed cauliflower rice in the freezer for times that I need a quick meal, or to add it to smoothies (yes, you read that right!). But you can also make it fresh (which is even more nutritious as it’s not pre-cooked), by pulsing cauliflower florets in a blender for a few seconds until a rice consistency forms.

Ingredients
2 tsp extra virgin olive oil (or coconut oil/ghee)
1 tsp chopped ginger (optional)
4 handfuls of chopped veggies (I used 1/2 a broccoli and 2 handfuls of broad beans)
Salt to taste
Pepper to taste
500g cauliflower rice
2 tbsp organic, gluten-free, soy sauce
4 eggs
1/2 lime
A handful of coriander (optional)
Directions
- Add the olive oil to a large pan on medium high heat. Add the ginger and stir for 1min, then add the chopped veggies and cook until tender (about 8min depending on the veggies). Season with salt and pepper
- Add the cauliflower rice to the pan for about 2min, mix in the soy sauce and cook for another minute
- Crack two eggs in the middle of the pan and mix until cooked. Give it all a big mix, taste for salt and pepper and transfer to a plate
- Using the same pan, fry the other egg and place it on top of the fried rice, add a squeeze of lime, coriander and enjoy
